Abstract

This study investigates the pattern of nutrient intake for Brazilians in the 1995 to 2003 period. For this purpose, the Almost Ideal Demand System (AIDS) was used. Results showed that the population nutrient demand is not too sensitive to prices and families tend to demand relatively more fat, cholesterol and carbohydrates than vitamins and minerals. Besides, the impacts of expenditure increases on nutrients consumption of are not very high. One important conclusion is that consumers will not necessarily consume more nutritious products when food patterns change, which may result in the deterioration of nutrients intake.
